There is a particular pleasure in sitting down to a seven-course tasting menu. It is an act of trust: you hand the evening over to the kitchen and allow a chef to guide you through flavours, textures and pairings you might never have chosen for yourself. At VINO, the flagship restaurant of W Algarve in Albufeira, that trust is rewarded again and again.

VINO began life as a wine bar, and that heritage still shapes everything about it. Over the years it has evolved into a refined dining room offering an à la carte menu alongside five- and seven-course tasting experiences, each with an optional wine pairing drawn from a list curated by the restaurant’s sommelier. Chef Andrea Ciuccio describes the menu as a collaboration between kitchen and cellar, with dishes conceived specifically to sit alongside the wine rather than simply accompany it. Guests will also find a selection of local cured meats and international cheeses, a quiet nod to the restaurant’s origins.

The space itself is intimate by design: warm wood, soft pendant lighting and a marble-topped bar lined with glassware. As evening falls, the room glows and the sun sets beyond the windows, making it a natural choice for a celebration or a date night.
The seven-course tasting menu moves with real confidence between the coast and the wider world. Local produce leads the way, from the oyster beds of the Ria Formosa to the Algarve’s own waters, yet it is handled with a light, international touch. Throughout the evening, the kitchen brings together ingredients you might never think to combine, and time after time they work beautifully.

The surprise of the night came from the dish I expected least from. The pork terrine, finished with a mustard dressing and served with warm sourdough, became my favourite course of the entire menu: rich yet refined, with a dressing unlike anything I had tasted before. It is precisely the kind of discovery that makes a tasting menu so rewarding.
From there, the menu builds towards deeper, slow-cooked flavours before closing with a gently spiced chocolate finale, bringing the evening to a quiet and elegant end.

The food at VINO is, quite simply, spectacular. What distinguishes Chef Ciuccio’s cooking is not only the quality of the produce but the confidence of the pairings: flavours and sauces that are genuinely new, combined in ways that consistently work. It is always a pleasure to discover something you have never tasted before, and this menu delivered that more than once.
